Banging Bang Bang Shrimp

Crispy, creamy, spicy shrimp oh my goodness. I mean the recipe serves 4 but once you start eating them you may not be willing to share any. I love the light batter from using cornstarch, it makes a lighter shrimp that sops up the sauce quite easily. Now this sauce, it's so addicting you are going to want to put it on everything. Well just go ahead and do it then because I do! It makes a great dipping sauce for veggies. I always have some left over and store it in the fridge in an airtight container for no more than a week. You can serve this with rice, pasta or even make tacos. Alright since your mouth should be watering by now, get your ingredients together so you too can become addicted to these banging bang bang shrimp.

Ingredients
  • 1 lb of medium shrimp deveined
  • 1 tsp vinegar
  • 1 tsp lemon juice
  • 1 tsp honey
  • 2 cups of buttermilk
  • 1/2 cup of mayonnaise
  • 1/4 cup chili garlic sauce
  • 1/4 Thai sweet chili sauce
  • 1 cup cornstarch - seasoned with a little salt, garlic powder and black pepper
  • Chopped scallions for garnish
  • Oil for frying
Directions
  • Step 1 Prepare the sauce by combining the mayonnaise, chili garlic sauce , Thai sweet chili sauce, lemon juice, honey and vinegar. Stir well.
  • Step 2 Place buttermilk in a bowl add shrimp. Soak for 30 minutes.
  • Step 3 In a deep skillet add 3-4 inches of oil and heat to 375 degrees.
  • Step 4 Add seasoned cornstarch to a bowl and press shrimp into cornstarch insuring it’s fully coated. Shake off excess cornstarch.
  • Step 5 Add shrimp to skillet and fry until lightly brown, approximately 1-2 minutes on each side.
  • Step 6 Remove shrimp and place on cooking rack.
  • Step 7 Combine shrimp and sauce in a bowl. Gently toss shrimp until well coated.
  • Step 8 Garnish with scallions.
  • Step 9 Serve immediately!
