Lobster & Salmon Creamy Pasta

Pasta has me in a chokehold, I'm not going to lie. It's usually my cheat meal during the week and I like to make it bougie and go all out. That's exactly what I did here. I'm a seafood lover and if I had the coins I would probably eat seafood 5 days a week. Salmon and lobster are two of my most favorites. Pairing seafood and pasta is heavenly and when it's submerged in the creamiest, most flavorful sauce - you can not go wrong.

Ingredients
  • 1 lb linguine noodles
  • 1 1/2 - 2lbs lobster claws or lobster tails (If using lobster tails, cut the top shell of the lobster tails lengthwise down the middle with kitchen shears. Using a knife, cut all the way through the tails to split into 2 pieces)
  • 2 tbsp cooking oil
  • Salmon:
  • 1 1/2 lbs Salmon cubed
  • 2 tbsp Garlic powder
  • 1 tsp Black pepper
  • 1 tsp Cajun seasoning or more to taste
  • 1 tsp Old bay seasoning or more to taste
  • Sauce:
  • 1/2 tsp Cajun seasoning
  • 1/2 tsp old bay seasoning
  • 1/2 tsp garlic powder
  • 1/2 cup white wine. You can substitute using seafood or chicken broth
  • 2 tbsp basil chopped
  • 1 shallot minced
  • 1 lemon, juiced
  • 2 tbsp parsley chopped
  • 1 tsp red pepper flakes
  • 5 garlic cloves, minced
  • 1/2 stick unsalted butter
  • 1/2 - 1 cup shredded parmesan cheese
  • 2 1/2 cups heavy cream
Directions
  • Step 1 Boil pasta in salted water according to package instructions.Cook al dente, drain and reserve some pasta water. You can use a little to help bind and thicken your sauce.
  • Step 2 Season cubed salmon on both sides with garlic powder, old bay, Cajun seasoning and black pepper.
  • Step 3 Heat 1 tbsp oil in large non stick skillet over medium-high heat. Add salmon and cook for 3 minutes or until golden. Turn salmon, cook an additional 2 minutes then add 1 tablespoon of butter. Once butter starts foaming, begin spooning butter over salmon by tilting the pan so the butter pools on one side. Use a large spoon to scoop the butter up and spoon it over the salmon. Baste for 1 minute and remove from pan.
  • Step 4 Heat 1 tbsp oil in a large non stick skillet over medium heat then add 1 tbsp butter. Once butter starts to slightly foam add shallots and cook for 1 minute. Add garlic and sauté for 1 minute. Add white wine and cook for 2 minutes, while stirring. Add remaining butter and lemon juice then toss in lobster. Sauté for 3-4 minutes. If using lobster tails, cook flesh down- 1 minute per ounce. The lobster meat should be white and the shell a bright red. Remove only the lobster from the pan.
  • Step 5 Add the heavy cream to the pan and season with Cajun seasoning, red pepper flakes, old bay, garlic powder and basil. Bring to a simmer until sauce has thickened, add cheese and stir. Add about 1/4 cup of pasta water for a thicker sauce, mix well. Add lobster back to pan, then add pasta & salmon. Cook for 2 minutes.
  • Step 6 Garnish with parsley and parmesan cheese. Enjoy!
