I probably eat way too much rice. No, I'm sure I do. This rice right here though, mmm - delicious. No more boring rice, the aromatic flavors elevates this dish. I have a chicken kebab recipe that you can serve this with. Add some vegetables or a Greek salad and your meal is complete. Enjoy!

Ingredients
  • 2 cups basmati rice, rinse until water is clear to release excess starch and drain thoroughly
  • 3 cups chicken or vegetable broth
  • ¼ cup water
  • 1 tablespoons olive oil
  • 1 tablespoon of butter
  • ½ cup diced yellow onion
  • 2 teaspoons turmeric
  • ½ teaspoon cinnamon
  • 1 bay leaf
  • 3 garlic cloves minced
  • ½ teaspoon black pepper
  • 1 teaspoon cumin
Directions
  • Step 1 In a medium pot over medium heat, add olive oil and sauté onion until softened.
  • Step 2 Add turmeric, cumin, garlic and butter to the onion and cook for 30 seconds. Add rice to pot and stir for 2-3 minutes until combined well.
  • Step 3 Add broth, water, salt, pepper and bay leaf to pot and return to a boil. Cover pot, reduce heat to low and simmer for about 15 minutes until water is absorbed (check the package directions of your rice as it may be slightly different). Remove bay leaf.
  • Step 4 Remove pot from heat with lid loosely over pot and let stand for 10 minutes. Fluff rice with fork and serve!
