Cajun Salmon Pasta

Ingredients
- For the pasta:
- 12 oz of linguine - (3/4) box
- For the salmon:
- 2 pounds salmon (cut in 4)
- 2 tablespoons olive oil
- 4 teaspoons cajun seasoning
- For the sauce:
- 1 cup diced bell peppers
- 1 tablespoon minced garlic
- 1/2 cup diced onions
- 3 cups heavy whipping cream
- 1 cup parmesan cheese
- 1 teaspoon red pepper flakes
- 2 teaspoons smoked paprika
- 2 teaspoons cajun seasoning
Directions
- Step 1 Cook pasta in salted water according to package. Drain, rinse and set aside. Save a little pasta water just in case you need to thicken the sauce
- Step 2 Wash salmon with cold water and lemon juice. (I wash all my meat and seafood, this step is entirely up to you)
- Step 3 Pat salmon dry on both sides with paper towel
- Step 4 Season salmon front and back with cajun seasoning
- Step 5 Heat cast iron on medium high heat, then add olive oil
- Step 6 Cook salmon skin up for about 4-5 minutes until you get a nice sear and it’s almost cooked through. Flip and cook another 3-4 minutes
- Step 7 Remove salmon from pan and set aside
- Step 8 Using a large deep skillet, sauté the peppers and onions for 2 minutes until tender using the oil you cooked the salmon in. It’s filled with flavor! Add the garlic and cook for 30 seconds
- Step 9 Add heavy whipping cream slowly while stirring continuously for 3-4 minutes until sauce starts to boil
- Step 10 Reduce heat to medium low, add parmesan cheese, red pepper flakes, paprika and cajun seasoning. Stir well and simmer until sauce is slightly thickened and creamy, about 3 minutes. Taste the sauce and add more cajun seasoning if needed
- Step 11 Add pasta to the sauce and toss until evenly coated. Remove from heat
