Quick Chinese Shrimp & Broccoli

I'm originally from New York and we have some great Chinese food. When I go home to visit, you know I have to have my fair share and bring some back to Atlanta. There aren't that many Chinese restaurants that I frequent here so I've learned to make some of my favorites right in my kitchen. This shrimp & broccoli is quick and super easy to make.
Ingredients
- 2 tablespoon olive oil
- 1 pound medium shrimp peeled and deveined
- 3 cups fresh broccoli florets
- 1 green onion chopped
- 1 tablespoon grated ginger
- 3 garlic cloves minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon sesame seeds (optional)
- For the sauce:
- 1 1/2 tablespoon cornstarch
- 1 teaspoon of brown sugar
- 1 teaspoon sesame oil
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1/2 cup of water or chicken stock
- 1 teaspoon chili garlic sauce (optional)
Directions
- Step 1 Peel, devein and wash shrimp with lemon juice & cold water.
- Step 2 Season shrimp with salt and pepper.
- Step 3 Blanche broccoli in boiling water for 2-3 minutes just until tender and place in ice bath to stop cooking.
- Step 4 In a small bowl, whisk together water, oyster sauce, soy sauce, sesame oil, cornstarch, brown sugar and chili garlic sauce if using.
- Step 5 Add 1 tablespoon of olive oil to a large skillet on medium high heat and stir fry shrimp for 2-3 minutes until shrimp changes color. Transfer to a plate.
- Step 6 Heat remaining oil in skillet on high heat and stir fry, onion, garlic and ginger for 30 seconds.
- Step 7 Add shrimp, broccoli and sauce to skillet. Stir fry for 2-3 minutes until sauce thickens.
- Step 8 Transfer to plate. Add sesame seeds if using.
- Step 9 Ready to serve!
